Easy Summer Salad with Frozen Veggies

Enjoy a light refreshing salad with your next grilled masterpiece!

Not all salads have leaves! Here’s a quick and easy recipe you can throw together in just minutes. Market research (here, my family) suggests it goes well with ALL grilled goodness. From chicken to pork, ribs to brisket, add this easy summer salad with frozen veggies on the table for a quick win!

Summer Salad Ingredients

I’m going to keep it simple here. This combo worked for us with braised ribs. Pairing with chicken could be just as easy – add or adjust to taste!

  • Chopped/Mixed Veggies
    1. 1 bag frozen baby peas
    2. 1 bag frozen corn
    3. 1 bag frozen carrots
    4. 3-4 stalks celery
    5. 1 large zucchini
  • Dressing
    1. 1 cup olive oil
    2. 1 T red wine or basalmic vinaigrette
    3. salt and pepper (to taste)

Preparation

I feel a little silly saying so, but total prep for this is just minutes. First, clean and prep the celery and zucchini. Chop up each into small bits, about the size of a fingernail. I recommend slicing long veggies lengthwise and then making the final cut across the strips to ensure cutting is manageable… AND SAFE. Next, mix all the veggies together in a large bowl.

Set this aside while prepping the dressing.

Fresh ground pepper and pink Himalayan salt do the trick for this dressing.

Olive oil is a good base for dressings. Measure out the 1 C olive oil and add the vinaigrette of your choosing. Sprinkle salt and pepper to taste and MIX WELL.

Finally, add the dressing to the chopped and mixed veggies. I like to cover the bowl with a plate and shake up the contents to ensure everything gets an even coat, but your methods (and mileage) may vary.
