Simple breakfast sandwich

We all enjoy a good breakfast sandwich so here is my simple version of one. Seem to be making these every Saturday morning for the kiddo! He loves them!

Simple and tatsy

Ingredients:

4-6 rashers of bacon.
2 eggs.
2 slices of sourdough bread.
1/2 cup of mixed cheese.
Butter.
Pinch of salt and pepper.

How to prepare

1: Toast bread and butter once done and set to one side.
2: Whisk the eggs and add salt and pepper seasoning.
3: Heat the pan and cook bacon.
4: Once you have reached the desired crispiness then remove from pan (shaking off any access fat back into the pan) and place one side of the toast.
5: Give the eggs another quick whisk then pour them into the pan using the bacon fat to cook them. Move the pan around until you get a thin covering of egg.
6: Sprinkle the cheese on top of the egg and let in cook for a minute or two.
7: Fold the egg into a rectangle and flip over. Cook the eggs for another couple of minutes flipping it occasionally to help it cook through.

8: Place on top of the bacon, add the 2nd piece of toast.
9: Wait approx. 1 minute then cut in half.
10: Enjoy!
