Kielbasa with Pineapple

As requested by some of our social media followers, here is how we did our smoked kielbasa with smoked pineapple rings. Thanks to Mike F for coming up with the idea, putting it all together and cooking it up for us!

Ingredients: 4 kielbasa sausages (we used 2 plain and 2 spicy), 2 cans of pineapple rings, brown sugar, SPG rub and a BBQ sauce (we used Stubbs Sweet Heat).

The smoker (we used our Pit Boss Wood Pellet for this) was pre-heated to 250 degrees, while this was heating, the kielbasa was sliced diagonally and laid them on a smoking rack. The pineapple rings were drained and also placed on a smoking rack. Both trays went into the smoker for 1 hour.

After an hour both trays were removed. The kielbasa was added to a pan and mixed with the BBQ sauce and the pineapple sprinkled with brown sugar and SPG. The pineapple was then placed on top of the kielbasa and returned to the smoker. The temperature was raised to 300 degrees and cooked for approximately 30 minutes. We served them straight from the pan!

Everyone really enjoyed these and is definitely a do again.

Bonus: got to make lunch with the leftovers the following day. A French roll stuffed with thinly sliced sharp cheddar and the smoked kielbasa sausage!

    Update….

    We did this a second time and added some Sweet Molasses BBQ rub to the Kielbasa before smoking it. A game changer…. the Kielbasa tasted so good, a little sweetness to it. Definitely going to be doing this every time from now on.
